IMPORTANCE OF THE LAW OF LARGE GENERATORS: BENEFITS AND CHALLENGES FOR FOOD COMPANIES

Solid waste is one of the great environmental paradigms of today. Despite the existence of legislation and regulations, in practice, there are still many actions to be taken to significantly control its impacts. The rules and legislation related to responsibilities in waste management from large producers were analyzed. The food and beverage industry deserves attention due to its importance in attracting tourists and providing them with comfort. In bars, restaurants, cafeterias, and establishments with intensive use of kitchens, the production of solid waste is the result of their production processes, it is the result of the sum of waste, recyclables and organic. The research technique was the case study. The nature of the research was qualitative, due to the fact that the study focuses on these processes of solid waste production (collecting and interpreting information about the context of the research environment). The present study consists of a document analysis centered on questions about the legislation present in solid waste management. The interviews were conducted in March/2022, and its structure is based on data from a questionnaire survey of the unit's employees. In this survey, the analysis was realized through a sampling of the waste produced, and a method of gravimetric composition was used to diagnose the waste.
